The usual suspects

Scratch making is wonderful, but not always practical. Cake Mixes are versatile, easy and economical too!

So if you’re short on time or the pantry is missing some basics like sugar and flour, here is a great shortcut for cookies and muffins!


I usually use a yellow cake mix, but there aren’t too many rules here, so have fun with most any flavor. Just be careful of white cake mixes if you want to add heavy mix-ins like mini candy bars (more on that in another blog-ugh). The general recipe for cake mix cookies is easy: combine one box of cake mix (18.25 ounce), one egg and a stick of butter (softened). Add-in anything you want (nuts, dried fruit, chocolate chips, etc.) then bake at 350 for 8-12 minutes. Time depends on size and add-ins, so best to keep an eye (and nose) on ‘em.


Want muffins? One box cake mix, 2 tablespoons flour, 3 eggs, 2/3 cup milk, 1/3 cup vegetable oil (I use melted butter instead of oil), and 1 teaspoon baking powder. Again, mix-in anything you want!!! Bake at 350 for the same time as cupcakes (bake time depends on size and number-just do the toothpick test).
